| Aji Amarillo - The most common Peruvian pepper. Yellow color; fruity flavor, high heat--level 8. | Aji Limo - Peruvian red pepper; cherry sized. | Ancho - Ancho (means wide) the "King" because of it's widespread useage in sauces and moles. Sweet earthy taste, relatively mild heat, level 3. |

| Cascabel - Little Bell: Unique, nutty, woody taste. Looks like a cherry tomato, great in stew, sauces or soups. Heat level 4. | Chipolte Meco - Smoked Jalapeno but with different wood, giving it a milder sweeter taste. Brown in color as opposed to Chipotle Morita. Heat level 5. | De Arbol w/o Stem - Related to Pico de Pajaro; tanic smoked flavor; Good Heat and de-stemmed for the price 7.5. |

| Guajillo - Long, very hot chile. One of Mexico big 3 (Ancho, Chipotle, Guajillo); Distinctive Flavor a 5 on heat scale. | Japones
- Japanese Chile. Very Hot, a seven on the Heat Scale, interchangeable with
Arbol; a good burn for the buck. |
New Mexico-Hot - Hot and Mild New Mexico Chile; Earth flavor; Bright Scarlet color; Heat scale 2 for Mild 4 for Hot. |

| Pasilla
de Oxaca - Oxacan; try and find this one. Smoky, pungent fruit flavor,
sharp lingering heat level 6. |
Pico
de Pajara - "Birds Beak" closely related to Arbol, fruity
plum flavor; used in salsas, pickled sauces; small but hot 7-8 on the heat
scale. |
Pulla
- The small Guajillo; Thin fleshed, light flavor sharp fruit tones; Dry
intense heat. Level 5-6. |
