A Mexican chile with medium heat and a sweet, fruity undertone, the Guajillo chile can be compared to New Mexico chiles. However, the flavor is deeper and sweeter, making it essential to Mexican dishes and any fusion experiment. (De-Stemmed peppers reduce process and preparation time in the kitchen. In commercial kitchens it has been estimated that time savings in preparation of de-stemmed peppers can be as much as 15 minutes per hour.)
Once known as the hottest chile in the world, the habanero chile ranks in at 120,000 to 180,000 Scoville Heat Units. While it may have lost the title, habanero chiles are still the hottest commercially available chile with the most distinctive flavor profile. At The Chile Guy, we have selected the type grown in the Yucatan Peninsula of Mexico because of its heat, flavor, and relative cost. This fiery hot chile powder, used in moderation, adds a particularly spicy kick and a lovely red-orange color to any salsa, sauce, or molé. Though very well known for its heat, the habanero chile is also an extremely flavorful chile. A floral-fruity beginning followed by the powerful heat that some find intimidating. The Chile Guy offers habanero chile powder with the heat, flavor, and color you can use for any application.
Known as “cow bells” because of their seeds’ distinct ring after drying, cascabel chiles look like jingle bells. They have a nutty, woody taste and are commonly used in fine Mexican cuisine recipes such as stews, soups, sauces, and salsas. Cascabel chiles provide a medium heat profile, 1,500-2,500 Scoville Heat Unit range, and an aesthetic beauty to each dish in which they are incorporated.

Repackaging: All prices are based on bulk amounts 5 lb minimum. A $3 per box packing charge will be applied on orders which have a total product weight of less than 5 lbs.
