Sometimes referred to as the ‘little raisin’ because of its black wrinkled skin, the pasilla chile or negro pasilla chile adds mild to moderate 1,000-1,500 Scoville Heat Units and interesting color to your favorite recipes. They measure 4-5″ long and 2-3″ across and are perfect for molés, red chile enchilada sauces, casseroles, salsas, and stews.
