Ground Cinnamon is made from the Cassia Cinnamon. The Chile Guy sells both soft cinnamon sticks and Cassia Cinnamon from Mexico in Sticks, but the powder is made from the harder Cassia type of tree bark. Cinnamon is widely used for deserts, candy, coffee or baked goods and is generally regarded as much easier to use in recipes in its powdered format.
